There are four different field types available when creating custom fields, Not Limited to List (Free Key Field), Limited to List (List Restricted), Allow Multiple Selections (List Restricted) and Date Field (Date) with each field type described below.
Not Limited to List
The Not Limited to List field type allows users to free type data of their choice into the data field of the selected custom field.

Limited to List
The Limited to List field type will restrict users to a specific list where only one selection of data can be chosen for the selected custom field.

Allow Multiple Selections
The Allow Multiple Selections field type will restrict users to a specific list where multiple selections of data can be chosen for the selected custom field.

Date Field
The Date Field field type will allow users to enter a date or click the calendar icon to select a date for the selected custom field.
